Equipment

  • Non-stick pan, wok, food processor, knife and cutting board.

Ingredients

  • 120 g minced chicken or any meat of choice
  • 1 tbsp light soy sauce
  • ¼ tsp white pepper powder

Sauce

  • 1 tbsp light soy sauce for the sauce
  • 2 tbsp oyster sauce for savory depth
  • 1 tsp dark soy sauce for color and sweetness
  • ½ tbsp sesame oil for fragrance
  • ½ cup water

Instructions

  • Marinate the meat: Mix minced meat with 1 tablespoon of light soy sauce and ¼ teaspoon of white pepper powder. Let it rest for at least 10 minutes to soak in the flavor.
  • Sear the meat: Heat a little oil in a nonstick pan or wok on HIGH heat. Add the marinated meat and use a spatula to spread it out flat in the pan to ensure even browning. Flip the meat once one side is browned and sear the other side.
  • Make the sauce: While the meat is browning, mix together the sauce ingredients. Add ½ cup water to the mix and adjust the ratios to your preference.
  • Simmer the sauce: Pour the sauce over the browned meat and lower the heat to a gentle simmer. Cover the pan with a lid and cook until the meat is fully cooked and the sauce reduces to a thick, glossy consistency. Be careful not to let the heat get too high—this can dry out the sauce or burn the meat. If the sauce reduces too quickly, simply add a little more water until you reach your desired consistency.
  • Assemble your noodles: cook noodles of your choice and top with meat sauce, a ramen egg, blanched greens, and crispy shallots and shallot oil. Enjoy!

Notes

Chinese-Style Minced Meat Noodles - Quick FAQ
1. What ingredients do I need for Chinese-style minced meat noodles?
You only need minced meat, oyster sauce, soy sauce, aromatics (garlic/shallots), noodles of your choice, and optional toppings like shallot oil or ramen eggs.
2. What type of meat works best for this recipe?
Chicken, pork, or beef all work well. You can also use tofu, tempeh, or plant-based mince for a vegetarian option.
3. How do I make the minced meat sauce flavourful?
Sear the mince over high heat until lightly browned, then braise it in oyster sauce and soy sauce until the liquid reduces into a thick, glossy coating.
4. Why is browning the minced meat important?
Browning develops caramelisation, which adds depth and umami to the sauce and prevents the mince from tasting flat.
5. What type of noodles should I use?
Egg noodles, wheat noodles, ramen noodles, or even spaghetti work. Just use whatever you have at home.
6. How do I make crispy shallot oil for the noodles?
Thinly slice shallots, fry them until golden, then use both the crispy shallots and the infused oil to enhance the flavour of the dish.
7. How do I make a perfect ramen egg for noodle dishes?
Boil room-temperature eggs for 6.5 minutes, then cool immediately in ice water to keep the yolk creamy and runny.
8. Can I adjust the sweetness or saltiness of the sauce?
Yes. Add a little sugar for sweetness or extra soy/oyster sauce for saltiness. The recipe is very forgiving.
9. Can this recipe be meal-prepped?
Absolutely. The minced meat sauce keeps well in the fridge for 3–4 days and freezes beautifully for quick weeknight meals.
10. What vegetables can I add to minced meat noodles?
Bok choy, choy sum, shredded carrots, bean sprouts, spinach, or cucumbers all pair well with the rich minced meat sauce.
