- 200g chicken pieces (see Recipe Notes 1)
- 1 small carrot, peeled and quartered
- 1 potato, peeled and sliced
- 1/2 yellow onion, sliced
- A few tbsp flour (to coat chicken and to make cream sauce)
- 2 tbsp butter
- 1/2-1 cup chicken stock (add according to desired consistency)
- 1 tbsp lemon juice
- A few tbsp cream
- 1-2 tsp mustard
- salt and pepper to taste
Season chicken with salt and pepper, then coat in flour.
Heat up a little oil in saucepan and panfry chicken on both sides until the exterior becomes lightly brown. The chicken doesn't need to be cooked fully as it will continue cooking inside the oven.
In the same saucepan, add sliced onions and potatoes. Panfry potatoes on both sides until lightly brown to give them a nice caramelized exterior (= flavour!)Arrange the chicken, potatoes, carrots, onions in a Dutch oven or ovenproof dish. Now for the all important cream sauce. In saucepan, heat up butter until melted, then add 2 tbsp flour. Whisk until well mixed, then add chicken stock, lemon juice, cream, mustard and salt. Stir until smooth i.e. there are no lumps. IMPORTANT! You will be pouring this sauce over the chicken and veges, so make sure you have enough. You should end up with at least 1-1 1/2 cup of sauce, so adjust by adding chicken stock accordingly. Remember, the chicken and veges will emit their own juices as well. Pour this creamy sauce over the chicken and vegetables in the pot. Cover with an aluminium foil or ovenproof lid and bake in preheated oven at 350 C for 30 minutes. Now remove remove the foil and continue baking for another 10 minutes if you'd like some light browning on top. You can also add quick-cooking veges like peas at the 30th minute mark.
Creamy Chicken Casserole - Quick FAQ
1. What is a creamy chicken casserole?
A creamy chicken casserole is a baked dish made by cooking chicken and vegetables in a rich cream-based sauce. The casserole is usually baked in the oven, allowing the chicken to become tender while the sauce thickens and develops flavour.
2. What vegetables can be used in a chicken casserole?
Chicken casserole is very flexible and can be made with vegetables such as mushrooms, carrots, potatoes, or other root vegetables. The choice depends on what ingredients are available and personal taste preferences.
3. Can you make chicken casserole without mushrooms?
Yes, chicken casserole can be made without mushrooms. If mushrooms are omitted, flavour depth can be replaced with ingredients that provide umami, such as mustard, cheese, or savoury sauces.
4. Why add mustard to creamy chicken casserole?
Mustard adds a savoury, slightly tangy flavour that enhances the richness of cream-based sauces. It helps balance the dish and can compensate for the absence of naturally umami-rich ingredients like mushrooms.
5. How do you keep chicken moist in a casserole?
Chicken stays moist when it is gently cooked in liquid rather than exposed to direct dry heat. Poaching or baking chicken in a creamy sauce helps retain moisture and keeps the meat tender.
6. Can chicken breast be used in casseroles without becoming dry?
Yes, chicken breast can remain tender when baked slowly in a sauce. The liquid environment helps prevent the lean meat from drying out during cooking.
7. How long should chicken casserole be baked?
Chicken casserole is typically baked for about 40–45 minutes, depending on the size of the chicken pieces. The goal is to cook the chicken thoroughly while allowing the sauce to thicken and infuse flavour.
8. Can creamy chicken casserole be turned into a pie filling?
Yes, creamy chicken casserole can be adapted into pie filling by cutting the chicken and vegetables into smaller pieces. The mixture can then be topped with mashed potatoes, puff pastry, or shortcrust pastry before baking.
9. Can chicken casserole be prepared ahead of time?
Chicken casserole can be assembled in advance and refrigerated before baking. It can also be reheated after cooking, making it suitable for meal preparation.
10. What makes creamy chicken casserole a beginner-friendly recipe?
Creamy chicken casserole is beginner-friendly because it uses simple cooking techniques, forgiving ingredients, and one-dish baking. The sauce helps protect the chicken from overcooking, making the recipe easier to execute successfully.
