Heat up 3 tablespoons of oil — you do need quite a bit for this recipe.
Add smashed garlic.
Add oyster sauce and dark soya sauce. Stir continuously with the garlic so the sauces caramelise slightly.
Pour in light soya sauce and sesame oil.
Add in half a chicken, skin side up, with the bones submerged in the sauce. Add ½–¾ cup of water.
Cover with a lid and braise for about 30 minutes, or until the chicken is tender and the sauce is thick and glossy, turning the chicken halfway through.
Remove chicken from the sauce and cut into bite-sized pieces.
Pour the sauce over the chicken pieces and serve with white rice.
