The first time I saw someone make a quiche using tortilla wraps on Instagram, my reaction was immediate.

OMG. I gotta try this.

But then the skeptical foodie voice in my head kicked in: Can a tortilla really replace a proper buttery shortcrust pastry shell?

The answer?

Yes … and no.

No, because two tortilla wraps obviously cannot compete with a flaky French pastry crust. Let’s be honest. A bakery-style quiche has that rich, buttery base that melts into the custard filling.

But here’s the thing.

If you’re willing to bend the rules a little, you can more than make up for it.

How to level up your humble airfryer tortilla quiche

The answer: Fill it to the brim with your favourite toppings.

I packed my savoury custard with chopped smoked chicken ham, spring onions, cubes of cheese, and juicy bits of cherry tomato. The tortilla shell simply acts as a crispy edible container holding all that goodness together.

The result was SHOCKINGLY satisfying.

The tortillas crisp up nicely in the air fryer and hold their shape beautifully. And because the crust is lighter than traditional pastry, the filling actually becomes the star of the show.

Even better, the whole thing comes together in about 20 minutes, using ingredients you probably already have in your fridge.

What you need for your airfryer tortilla quiche

First, stack two tortilla wraps on top of each other, then press into the silicon airfryer mould. Pre-bake a few minutes until they harden slightly.

Now, time for the custard. It’s deliberately simple: just eggs, a little cream, and black pepper.

Scatter your toppings all over your pre-baked shell and pour the custard over. Once baked, it turns silky and savoury, soaking up the flavours of the ham, cheese, and vegetables.

Will this replace a bakery quiche forever? Probably not.

But when you want something quick, satisfying, and delicious without the fuss of making pastry, this tortilla quiche absolutely hits the spot.

  • Air Fryer
  • Silicone baking mould
  • Mixing bowl
  • Fork or whisk

Ingredients
  

  • 2 tortilla wraps
  • 3 small or 2 large eggs
  • 3 tbsp cream
  • Pinch of black pepper
  • 1/4 cup chopped smoked chicken ham
  • 1 tbsp chopped spring onions
  • 1/4 cup cubed cheese
  • 4-5 chopped cherry tomatoes

Instructions
 

  • Place two tortilla wraps into a silicone mould, pressing them gently so they form a quiche shell.
  • Air fry at 180°C for 5 minutes to firm up the tortillas slightly.
  • While the tortillas bake, prepare the custard by whisking 3 eggs, 3 tablespoons cream, and black pepper together in a bowl.
  • Scatter the ham, spring onions, cheese, and tomatoes evenly inside the tortilla shell.
  • Gently pour the egg custard over the filling.
  • Return the mould to the air fryer and cook at 180°C for about 15 minutes, or until the custard is set.
  • Let it cool slightly before slicing.

1. Can you make quiche in an air fryer?
Absolutely. An air fryer works very well for small quiches. The circulating hot air cooks the egg custard evenly while crisping the crust.

Yes. Tortillas can act as a quick crust substitute. They become crisp when pre-baked and hold the filling well.
3. How long does quiche take in an airfryer?
Most air fryer quiches cook in 15–18 minutes at 180°C, depending on the thickness of the filling.
