Airfryer Tortilla Quiche

The first time I saw someone make a quiche using tortilla wraps on Instagram, my reaction was immediate. OMG. I gotta try this. But then the skeptical foodie voice in my head kicked in: Can a tortilla really replace a proper buttery shortcrust pastry shell? The answer? Yes … and no. No, because two tortilla…

Nasi Goreng Kampung with Homemade Sambal Hijau

There are two types of nasi goreng kampung in this world. The sad, pale, under-seasoned kind you regret ordering. And the one that smacks you with chilli, ikan bilis and enough wok hei to feel like someone’s grandmother just cooked it up. Oh, and a runny fried egg on top (non-negotiable) This is the second…

Nam Khao (Lao Crispy Rice Salad)

If you’ve never tasted Nam Khao, imagine a salad that crunches, crackles, and bursts with limey, savoury, slightly sweet flavours in every bite. I first learned about this Laotian dish from vegan cook Maya. She made it look soooo appetizing that naturally, I had to try making it at home. Of course, with a little…

Every Chinese family has its own treasured version of soya sauce chicken, but for me, nothing comes close to Mum’s. Her version is full of soul, the kind of dish that speaks volumes about who she is. Chicken Kimchi Pajeon

Like many people, I discovered pajeon, the Korean savoury pancake, through K-dramas. During the early days of the COVID-19 pandemic, we were stuck in our apartment for weeks. Nowhere to go. Nothing much to do. From Crash Landing on You, I watched another .. and another…and another. Somewhere in between all the plot twists and…

Air-fried Stuffed Potatoes with Savoury Minced Beef

What can I do with potatoes that’s more exciting than French fries or mash? This recipe began with that simple question. There they were — a humble bag of baby potatoes leftover from last night’s dinner party, waiting to be transformed. I wanted something that would make my weeknight dinner feel special without requiring a…

Pistachio Pesto Pasta

No, this pistachio pesto pasta is not classic, but after trying this recipe, you might just prefer it to the original version with pine nuts! First, why pistachio for pesto? Mum’s Fried Beehoon

Mum’s fried beehoon is “very simple only.” Come to think of it, that’s her standard answer whenever I ask her for the recipe of virtually any dish she cooks. She’s telling the truth. When she describes the process to me, it DOES sound simple. Ingredient lists are typically short. The steps, few. But somehow in…

Chicken Confit

Make chicken confit at home? No way in hell, man! Or at least – until yesterday. Now, I’ve seen chicken or duck confit in restaurant menus a number of times, in particular fancy restaurants.
