Some of my favourite kitchen experiments happen when I’m trying to clear leftovers from the fridge, like this no-bake Greek yogurt “cheesecake”.

You’ve probably seen the viral two-ingredient cheesecake trend by now. This version uses just one extra ingredient, and honestly, it tastes even better. I’m speaking as someone who has tried the viral cheesecake and thinks it’s pretty good.

This one started with half a chocolate tuxedo truffle cake sitting in its box, plus a tub of Greek yogurt that I had originally bought for breakfast.

Is the two-ingredient Greek yogurt Biscoff cheesecake any good?

Around the same time, the two-ingredient yogurt cheesecake trend kept appearing on my feed, and I found myself wondering: does the two-ingredient Greek yogurt Biscoff cheesecake really work? The only way to find out, of course, was to try my own slightly cheeky version.

Instead of baking anything, I blended the Greek yogurt together with the leftover chocolate cake in a food processor. Within seconds, the mixture turned into something that looked like a silky chocolate mousse. Thick, creamy, and just tangy enough to balance the sweetness from the cake. At that point, I knew this experiment was heading in a very promising direction.

I poured the mixture into a square container, smoothed the top, then lined a row of Biscoff biscuits across the surface because chocolate and caramel spice are always a winning combination. After about an hour in the fridge, the dessert had firmed up nicely — soft enough to scoop, but structured enough to slice if chilled a little longer.

The result tasted surprisingly close to a classic no-bake cheesecake, but lighter and much faster to prepare

Nobody who tried it guessed it started with leftovers, which might be my favourite part of the whole story. Just perfect for days when you want dessert without turning the kitchen upside down.

Not every good dessert needs a long ingredient list.

Sometimes two or three smart shortcuts are all it takes to create something genuinely satisfying — and occasionally, a new household favourite too.

No-bake Viral Greek Yogurt Cheesecake

A riff off the viral two-ingredient cheesecake, this version repurposes leftover cake into a creamy, indulgent treat in under 1 hour

Ingredients
  

  • 1 cup Greek yogurt
  • ½ Starbucks chocolate tuxedo truffle cake or any chocolate or oreo cake
  • 6 Biscoff biscuits

Instructions
 

  • Add Greek yogurt and chocolate cake into a food processor.
  • Blend until smooth, thick and creamy.
  • Pour mixture into a square container and smooth the surface evenly.
  • Arrange Biscoff biscuits in a neat row across the top.
  • Refrigerate for at least 1 hour until set.
  • Slice and serve chilled.
